Required products :

  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 1 red pepper, cleaned and chopped
  • 1 small hot pepper, chopped
  • 8 cherry tomatoes
  • 1 slice of bread with yeast, cut into cubes
  • 4 eggs
  • 2 tablespoons skim milk
  • salt and pepper to taste
  • small bunch parsley, chopped
  • 4 tablespoons yogurt per serving

Method of preparation :

Grease the inside of a slow cooker with 1 tablespoon of olive oil.

Heat the remaining 1 tablespoon of olive oil in a pan. Add the chopped onion, red pepper and hot pepper and cook until soft. Pour into the slow cooker and add the cherry tomatoes, bread cubes and mix everything. Season with salt and pepper to taste.

Beat the eggs with the milk and parsley in a bowl and pour into the slow cooker, making sure you cover all the ingredients. Allow to cook until done. Serve with yogurt.
