How To Cook Turkish Kadaif With Pistachios - Recipe

Required products :

  • 100 grams of butter
  • 250 grams of kadaif
  • 200 grams of raw pistachios / or a mixture of pistachios and walnuts /
  • 200 grams of powdered sugar
  • 200 milliliters of water
  • 1 1/2 tablespoons fresh milk

Method of preparation :

  • In a small saucepan, melt the butter, add the milk and stir. Remove from the heat and set aside to cool.
  • Spread the velvet on a flat surface, making sure there are no glued parts and cut it into pieces about 2.5 cm in size.
  • Place the chopped kadaif in a deep bowl and add the melted butter and milk.
  • Mix well with your hands without crushing it.
  • Divide the oiled kadaif into two equal parts and spread the first one in a pre-greased square tray about 20 cm wide. The base should be about 2 centimeters thick.
  • Press with your hands and make sure the bottom is completely covered.
  • Finely grind the nuts and distribute 150 grams of them evenly on the first velvet peel.
  • Cover them with the second layer of kadaif and press well down and to the edges of the tray again.
  • Bake in a preheated 180 degree oven until golden brown. Be careful not to burn the nuts, as they will acquire a bitter taste. If necessary, cover the velvet with aluminum foil.
  • Meanwhile, prepare the syrup by mixing the sugar and water in a saucepan. After boiling, wait for it to thicken until its volume is reduced by nearly 1/4. You will know that it is ready when it starts to leave thicker marks on the spoon.
  • Transfer to a bowl of suitable size to cool.
  • Remove the kadaifa from the oven and pour the cooled sugar syrup over it.
  • Wait about 10-15 minutes before sprinkling with the remaining nuts.
  • Cut into small squares and serve.
