How To Cook Vanilla Cake With Puff Pastry And Passion Fruit - Recipe

Required products :

  • 2 sheets of puff pastry, slightly thawed
  • 1 1/3 tea cup of crystal sugar
  • 1 teaspoon corn flour
  • 1 packet of vanilla cream (starch)
  • 4 1/2 teaspoons fresh milk
  • 75 grams of butter
  • 2 egg yolks, broken
  • 1 teaspoon vanilla
  • for the glaze:
  • 2 1/2 teaspoons powdered sugar
  • 10 grams of butter
  • 2 pieces of passion fruit, halved

Method of preparation :

Cover the bottom of a 22 cm square baking tray with parchment paper. Cut wide strips to put on the sides along the edges (pre-grease with oil to stick to the dish), make sure they come out at least 3-4 inches above the pan.

Put 1 sheet of puff pastry in two pans and bake for 8-10 minutes at 200 degrees until they swell. Carefully flatten the dough with a knife and allow to cool.

Put the sugar, corn flour and cream powder in a saucepan and heat. Start gradually adding the butter, stirring constantly with a wire, until a smooth, creamy texture. Add the butter and without stirring, continue to cook for about 8-10 minutes until the cream thickens. Remove from the heat. Add the egg yolks and vanilla.

Place 1 sheet of dough on the bottom of the prepared pan, cut off excess dough. Pour the cream and top with the second sheet of baked puff pastry. Allow to cool for 30 minutes.

Make the glaze - put the powdered sugar, butter and passion fruit in a bowl on a water bath. Stir over heat until combined. Pour the resulting cream on the cake and refrigerate for 4 hours.

Serve the cake cut into squares.
