Cut the meat into pieces, rub salt, pepper, crushed garlic, thyme sprigs and lemon zest. Leave it for an hour, and later pour the beer and honey.
Fry the meat in olive oil, add the halved onion, diced potatoes, plums and season with mustard. Stew the mixture for ten minutes, remove the lid and simmer on low heat until done. Serve warm, decorated with thyme sprigs.
