How To Cook Vegan Cashew Cheesecake With Honey And Fruit - Recipe

Required products :

  • 2 teaspoons raw cashews
  • 4 tablespoons honey (maybe more)
  • 1 1/2 lemon
  • 100 grams of walnuts
  • 1 banana
  • 2 tangerines
  • 1/2 cup dried apricots
  • 1 tablespoon cold pressed olive oil
  • 1/2 teaspoon ground cinnamon
  • pinch of black salt
  • coconut shavings for sprinkling


Method of preparation :

Drizzle the cashews and dried apricots with water and let stand for a while (the nuts for about an hour and the fruits until soft).

Grind the walnuts, mix with the cinnamon, a pinch of salt and olive oil. Distribute on the bottom of a suitable form.

Squeeze the juice from one lemon, peel the white parts. Put it in a blender, pour the citrus liquid, sweeten with honey and beat for about 3 minutes.
Then add the cashews that you soaked, rinsing it with clean water. Beat until smooth (about 5 minutes). You may need to add a little water.

Apply the mixture prepared in this way on the walnut base and store in the refrigerator.

Peel a squash, grate it and squeeze the juice. Grind the meat in a blender together with the banana, tangerines and apricots (about 5 minutes are enough to make the fruit combination homogeneous).

Remove the dish from the chamber and spread the third mixture over the cashew layer.

Sprinkle with coconut shavings and return the dessert to the chamber for about 3 hours.

Thirty minutes before serving, transfer to the refrigerator.
