Preheat oven to 190 degrees. Heat the olive oil in a large skillet over medium heat and fry the mushrooms and onions, stirring often, until the mushrooms release their liquid. Add the green beans, vegetable broth and let the liquid boil.
Mix 3/4 cup of almond milk with the flour in a bowl and pour into the pot with the green beans. Cook, stirring often, until the mixture thickens (2-3 minutes).
If the sauce looks too thick, add 1/4 cup almond milk. Season with soy sauce, black pepper and salt.
Transfer to a roasting pan, sprinkle with crispy vegan roasted onions and bake for 20-25 minutes or until onions are golden brown.
