If for some reason you do not consume animal products or do not like mayonnaise from the store, try this recipe. You will get tender mayonnaise with a very delicate taste, suitable for even the strictest vegans.

Required products :

  • 2 cloves garlic (crushed)
  • 1 tablespoon lemon juice
  • 2 teaspoons Dijon mustard
  • 3 tablespoons canned chickpea juice (35 milliliters)
  • 12 canned chickpeas
  • 1/4 tea cup olive oil
  • salt and pepper

Method of preparation :

Combine garlic, lemon juice, mustard, chickpea liquid ( aquafaba ) in a tall bowl. Turn on the blender at high speed by placing it on the bottom of the bowl. Once you get a smooth cream, gradually start adding the fat without stopping the blender. Once the fat is absorbed, the mayonnaise is ready.
