Required products :

for cupcakes :

  • 1 and 1/2 cups flour
  • 1 cup sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 tablespoons salt
  • pinch of cinnamon powder
  • 1 cup almond milk
  • 6 tablespoons coconut oil, liquid
  • 1 tablespoon balsamic vinegar (optional)
  • 1 teaspoon vanilla extract

for cream :

  • 1/3 cup coconut oil
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder, sifted
  • 2 cups powdered sugar, sifted
  • 6 tablespoons almond milk
  • coarse crystalline salt for garnish (optional)

* A tea cup is used to measure the quantities.

Method of preparation :

Turn the oven to 180 degrees and place 15 paper tins in a cupcake tray.

Sift the flour, sugar, cocoa, baking powder, baking soda, salt and cinnamon into a large bowl. Mix the flour mixture with the almond milk, coconut oil, balsamic vinegar and vanilla until smooth. Pour the dough into paper cups and bake for about 20 minutes or until done.

Beat the coconut oil and brown sugar until smooth. Add the vanilla and cocoa powder and stir. While constantly beating with a mixer, gradually pour the powdered sugar and almond milk until you get a smooth and fluffy cream.

Decorate the muffins with a syringe, sprinkle with salt crystals (optional), cool and serve.
