This ultra chocolate vegan gelato in Sicilian style is made without milk or cream and without eggs. However, it is creamy, smooth and fragrant. The coconut milk used for the base gives softness and a rich feeling of fine coconut taste.

Mix the cocoa powder with the coconut milk in a medium bowl and stir to obtain a smooth paste. Add the vanilla extract and stir again.
In a medium saucepan, mix the sugar, cornstarch and salt. Add the remaining coconut milk and stir the mixture. Heat over medium heat, stirring with a wooden spoon, until the mixture begins to simmer. Stir constantly while simmering for 2-3 minutes. Pour the hot liquid into the chocolate mixture and stir to homogenize, then allow to cool for 45 minutes without stirring during this time.
Cover and refrigerate for at least 3 hours. Pour the gelato mixture into an ice cream machine and freeze according to the manufacturer's instructions. For best texture, allow to soften slightly before serving.
Optionally, you can serve with fresh berries or chocolate chips.
