Method of preparation :
Soak the dried fruit in warm water for 10 minutes. Then rinse well and dry. Grind them with a meat grinder (or other suitable device) together with ginger and lemon (cleaned of seeds) to taste.
Transfer the mixture to a plate and sweeten to taste if you deem it necessary.
Melt the cocoa butter in a water bath, gradually add the cocoa to it, stirring thoroughly. Then sweeten with honey and continue to stir until smooth.
Once you've prepared the chocolate and filling, it's time to "assemble" the candies. For this purpose you will also need silicone molds.
Cover the bottom with chocolate and put in the fridge for a while.
When you take them out, spread the stuffing in them, put the almonds, then pour chocolate.
Return the molds to the refrigerator and let them stay there until the candies are completely firm.
