Learn how to cook "Vegan eggplant moussaka with tofu and walnuts". Delicious recipe.
Required products :
500 grams of eggplant
500 grams of tofu cheese
100 grams of walnuts
300 grams of dried tomatoes in olive oil
Method of preparation :
Cut the aubergines into long pieces, sprinkle with plenty of salt and leave for 30 minutes. Then rinse thoroughly with water.
Fry them until golden in hot olive oil.
Using a blender, grind the tofu together with the walnuts, add the finely chopped coriander or parsley.
In a suitable baking dish put a row of eggplants, on them a layer of tofu with walnuts, then dried tomatoes. Drizzle with the fat in which the tomatoes were.
Continue arranging the moussaka, repeating once more the layers of products in the same sequence.
Bake the dish in the oven at a temperature of 220 degrees for about 20-25 minutes.
