Necessary products:

 

  • 400 grams of chickpeas
  • 1 red pepper
  • 1 green pepper
  • 70 grams of chopped leeks
  • 1 onion
  • half a bunch of fresh parsley
  • 70 grams of chopped carrots
  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1 tablespoon einkorn flour
  • 1-2 teaspoons of linseed oil

 

for the sauce

 

  • 1 tablespoon ararut starch
  • 300 milliliters of soy milk
  • 2-3 sprigs of parsley
  • kosher salt
  • pepper

 

Method of preparation:

 

Put chickpeas, peppers, leeks, onions, parsley, carrots, salt, both peppers and flour in a blender. Grind to homogeneity of products.

From the mixture form meatballs and arrange them in a tray lined with a sheet of parchment. Sprinkle with linseed oil and bake in a preheated 200 degree oven for 30 minutes. Cool and set aside.

Pour the soy milk into a saucepan, mix it with the starch and spices. Heat over low heat and stir until thickened.

Spread the sauce on a plate, carefully arrange the meatballs and sprinkle with chopped fresh parsley. Serve and enjoy their taste!
