How To Cook Vegan Oatmeal Cookies With Fruit And Pumpkin Seeds - Recipe

Required products :

  • 1/2 cup wholemeal flour
  • 1/4 tea cup white flour
  • 1/2 teaspoon crystal sugar
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • 1 cup fine oatmeal
  • 1 teaspoon coconut shavings
  • 1/2 cup crushed walnuts
  • 1/4 cup raisins and dried cranberries
  • 1/4 tea cup pumpkin seeds
  • 1/2 teaspoon butter - unsalted, melted
  • 3 tablespoons honey
  • 1/2 teaspoon baking powder
  • 3 tablespoons boiling water

Method of preparation :

In a large bowl, mix the flour, sugar, cinnamon and salt. Add the oats and coconut shavings, stir. Add nuts, dried fruits and pumpkin seeds.

Separately combine the melted butter with the honey. Mix the soda with the hot water and pour in the oil, stir.

Make a well in the center of the oatmeal flour, add the butter, stir to make a crumbly dough.

Form 15 balls, distribute them in pre-lined baking trays. Leave more space between the balls and press them with your fingers to flatten them (you can also use the bottom of a cup, or flatten them with a fork). Bake them for 17-20 minutes until golden.

Wait for them to cool completely before removing them from the pan.
