Required products :

  • 1 tablespoon coconut oil
  • 1 tablespoon finely chopped ginger
  • 2 cloves garlic, chopped
  • 3 tablespoons curry paste
  • 2 sweet potatoes, cut into cubes
  • 1 can of 400 grams of chickpeas
  • 1 can of 400 grams of coconut milk
  • 1/2 teaspoon water
  • salt and pepper to taste
  • 200 grams of spinach
  • the juice of 1 lime
  • cooked rice for serving on request

Method of preparation :

Heat the coconut oil in a pan until it becomes shiny and fry the ginger for 1 minute. Add the curry paste and fry for another minute to release its aroma.

You should add the potatoes, chickpeas, coconut milk, water, salt and pepper and stir. Simmer under a lid for about 15 minutes while the potatoes are cooking.

Finally, add the spinach and after the leaves melt, remove from the heat and squeeze the lemon.

Serve with boiled rice, if desired.
