How To Cook Vegan Shepherd's Pie - Recipe

Required products :

  • 1 tablespoon oil
  • 1 leek, chopped
  • 2 carrots, finely chopped
  • 150 frame mushrooms, chopped
  • 1 large clove of garlic
  • 3 sage leaves, cut
  • 3 sprigs of thyme, cut
  • 1 can of 400 grams of green lentils, squeezed
  • 1 can of 400 grams of chopped tomatoes
  • 200 milliliters of vegetable broth
  • 200 milliliters of red wine
  • 1 tablespoon Worcester sauce if desired
  • 1 tablespoon soy sauce
  • 1 teaspoon hot pepper flakes
  • 1 teaspoon sugar
  • salt and freshly ground black pepper

To cover:

  • 2 sweet potatoes, cut into cubes
  • 2 ordinary potatoes, cut into cubes
  • 1/2 small head of cauliflower, in roses
  • small lump of butter (about 1 tbsp)
  • 1 tablespoon parmesan, grated, optional

Method of preparation :

For the filling, heat the oil in a pan. Fry the leeks in it until soft.

Add the carrots, mushrooms, garlic and cook for about 4-5 minutes.

Add thyme and sage, tomatoes, lentils, broth, wine and stir. Once the mixture boils, reduce the temperature and simmer for 20 minutes.

During this time, cook the potatoes for 10-12 minutes. Add the cauliflower and cook for another 10 minutes until all the products are soft.

Squeeze the vegetables and return them to the pan.

Add the butter, season with salt and pepper and mash.

Mix Worcestershire sauce, soy sauce, hot pepper and sugar and add them to the filling at the end of cooking. Cook for another 2-3 minutes and remove from the heat and season with salt and pepper.

Pour the filling into a pan and cover with the potatoes. Sprinkle with parmesan and bake for 20 minutes until golden at 200 degrees.
