How To Cook Vegan Sweet And Savory Cake With Vegetables And Nuts - Recipe

Required products :

  • 300 grams of a mix of nuts (almonds, hazelnuts, walnuts)
  • 1 cube vegetable broth
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 2 stalks of celery, cut into thin slices
  • 1 medium stalk leek, chopped
  • 2 medium carrots, grated
  • 2 cloves garlic, crushed
  • 4 tablespoons cashew tahini
  • 180 grams of cooked chestnuts, finely chopped
  • 75 grams of dried blueberries
  • 20 grams of chopped parsley
  • finely grated rind of 1 lemon
  • 4 tablespoons almond milk
  • 1 pinch of sea salt
  • black pepper to taste

Method of preparation :

Grind the nuts and the broth cube in a food processor until crumbs are obtained. No smooth mixture should be obtained, but pieces should remain. If you do not have a food processor, crush the nuts with a knife as finely as you can.

Preheat the oven to 200 degrees and cover the form with baking paper.

Heat the fat in a pan and fry the onions, celery, carrots and leeks for 5 minutes to soften. Add the garlic for a few seconds.

Transfer to a bowl and add the tahini to the vegetables. Stir and add the nuts, blueberries, chestnuts, parsley, lemon zest, almond milk and salt. Season with as much black pepper as you like.

Transfer the mixture to the pan and level with a spoon. Bake under foil for 30 minutes and another 20 minutes without.

Remove the cake from the oven and leave to cool for 5 minutes, then remove from the baking dish. Let cool completely before serving.
