Method of preparation :
Soak the cashews overnight. Squeeze it and put it in a blender. Turn it on briefly until the nut is well ground. Gradually add a few teaspoons of warm water until a homogeneous mixture is obtained.
To make the mayonnaise, put the squeezed tofu, cashew paste, lemon juice and mustard powder in a blender. Season with salt and pepper to taste. Turn on the appliance and mix until you get a smooth cream. Then add the sugar and wasabi sauce. Blend again.
Use the prepared sauce in combination with roasted vegetables or instead of mayonnaise in classic salads and other dishes.
