Healthy and fragrant vegan recipe for tofu with cauliflower rice. You can prepare them at the beginning of the week so that you always have a ready option for the days when you are very busy cooking. The recipe uses frozen cauliflower rice, which is a very good substitute for white or brown rice due to its lower carbohydrate content.

Necessary products:

  • vegan tofu with spices
  • 400 grams of cauliflower, ground to the size of rice
  • 4 teaspoons olive oil
  • 1 teaspoon Mexican mix - taco spice
  • 1 cup red cabbage, thinly sliced
  • 1 cup diced avocado
  • 1/2 cup classic tomato sauce
  • 4 tablespoons fresh coriander, chopped

Method of preparation:

Prepare vegan tofu with spices as described in the recipe. 

Boil the ground cauliflower. Season with olive oil and Mexican mix - such a spice. 

Divide the cauliflower rice into 4 storage boxes. Pour into each box 1/2 cup vegan tofu with spices, 1/4 cup red cabbage and avocado, 2 tablespoons classic tomato sauce and 1 tablespoon coriander. 

Close the boxes with their lids and store in the refrigerator. Pack for school lunch or for work.
