Necessary products:

  • 150 grams of hard yellow cheese
  • 1 onion
  • 1 pepper
  • 100 grams of asparagus
  • 3 potatoes
  • 1 zucchini
  • 1 eggplant
  • 50 grams of mustard oil

Method of preparation:

Wash and clean all vegetables. Cut the eggplant, potatoes and zucchini into cubes and finely chop the onion. Mix them with mustard oil (you can replace it with fragrant sunflower oil), salt and pour everything into a bowl (preferably clay). Put in the oven on medium heat for 35-45 minutes. Stir the vegetables during baking (2-3 times).

When the casserole is almost ready (judge by eye or taste), cut the cheese into thin slices or grate it on a large grater and cover the vegetables tightly with it. At the top arrange circles of pepper (if you use different colors, it will be interesting and beautiful) and asparagus stalks.

Return to the oven to bake until golden brown.
