How To Cook Vegetable Curry With Chickpeas And Pumpkin - Recipe

Required products :

  • 1 onion
  • 2 cloves garlic
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon curry powder
  • 2 sweet potatoes
  • 2 teaspoons pumpkin
  • 2 teaspoons cauliflower
  • 400 grams of tomatoes
  • 400 grams of chickpeas (pre-cooked and squeezed)
  • 400 milliliters of coconut milk
  • 1/2 tablespoon salt
  • 1/2 tablespoon smoked paprika
  • 1 tablespoon oil
  • 300 grams of tofu
  • 1/3 cup chopped coriander

 

Method of preparation :

Turn on the oven to preheat to 160 degrees. Prepare the sweet potatoes and pumpkin by cutting them into large cubes and the tomatoes into small pieces. Finely chop the onion and garlic. In a deep pan, pour all the vegetables and add the spices. Add the coconut milk and chickpeas. Bake for half an hour.

At the same time, while the products are baking, prepare the tofu. In a pan, heat the fat and roast the soy product until it gets a golden crispy crust on both sides. Then add to the pan with the vegetables and bake for another 20 minutes. Sprinkle with chopped coriander and serve on a plate of cooked rice.
