Required products (for about 15 meatballs) :

3 eggplants

5 medium potatoes

2/3 hours breadcrumbs

oil (as big as a matchbox)

a little parsley

frying oil

1/2 tsp black pepper

1/2 tsp citric acid

About the breading:

2 eggs

1 cup breadcrumbs

pinch of salt

Method of preparation:

Peel and cut the potatoes into large pieces, boil them in salted water. Peel the aubergines and cut them into circles, put them for 1-2 minutes in boiling water to which you have added citric acid. This will remove the bitter taste. Then lightly fry the eggplant in butter. Mash the potatoes until you get a thick puree. Puree the aubergines separately. Finely chop the parsley. Mix in a deep bowl the two purees, breadcrumbs, parsley, salt and season with pepper.

Beat the eggs with a fork, add salt. In a separate bowl, pour the breadcrumbs.

Start to form meatballs from the resulting "minced meat", roll them in eggs, then in breadcrumbs and fry in hot oil on both sides to form a golden crust.
