Required products :

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 stalks of leeks, cut into 1 cm pieces
  • 2 cloves garlic, thinly sliced
  • 150 grams of rice per paella
  • 1 teaspoon hot red pepper
  • a pinch of saffron
  • 2 bay leaves
  • 75 milliliters of white wine
  • 600 milliliters of vegetable broth (prepared from a cube dissolved in hot water)
  • 160 grams of canned artichoke, drained
  • 175 grams of roasted red peppers
  • 50 grams of pitted olives
  • lemon and parsley for serving

Method of preparation :

Heat olive oil and fry the onion for 8-10 minutes until soft and slightly browned. Add the leeks and garlic and cook for another 2 minutes, stirring constantly.

Add the rice and stir, a few seconds later add the saffron, paprika and bay leaves. Stir again and after half a minute pour the wine.

After the wine boils, pour the vegetable broth, stir and let the rice boil, stirring occasionally (if the rice is too dry, add a little more water).

You should add artichokes, peppers and olives. Stir, reduce the heat and simmer for another 15 minutes until the liquid is absorbed and the beans are completely cooked. If the rice does not look creamy, put a lid on the last 5-10 minutes.

Garnish with fresh parsley and lemon slices.
