How To Cook Vegetable Salad With Halloumi Cheese And Quinoa - Recipe

Grilled halloumi cheese salad with toasted wholemeal parlenka, tomatoes, dill, quinoa and fresh mint is a recipe inspired by the Middle East.

Required products :

  • 2 toasted wholemeal pearls
  • 5 tablespoons olive oil
  • juice for 2 lemons
  • 1 clove garlic, chopped
  • 250 grams of halloumi cheese, cut into pieces
  • 250 grams of boiled quinoa
  • 350 grams of tomatoes, cut into quarters
  • 1 large cucumber, cut into circles
  • 4 green onions, chopped
  • 1/2 small bunch of mint, chopped
  • 1/2 small bunch of dill, chopped

Method of preparation :

Heat the grill. Spread the parlenka with 2 tablespoons of olive oil and bake for 3-4 minutes or until crispy and golden brown. Set aside to cool slightly and cut into pieces.

Combine the remaining olive oil with the lemon juice and garlic, season to taste.

Heat a non-stick pan and bake the halloumi cheese for 1-2 minutes on each side until slightly charred.

Boil the quinoa following the instructions on the package. Allow to cool and mix with tomatoes, cucumber, green onions, fresh herbs and season with spices to taste. Stir and serve on a plate with halloumi cheese, toasted parlenka, dressing and chopped mint and dill.
