Grilled halloumi cheese salad with toasted wholemeal parlenka, tomatoes, dill, quinoa and fresh mint is a recipe inspired by the Middle East.

Method of preparation :
Heat the grill. Spread the parlenka with 2 tablespoons of olive oil and bake for 3-4 minutes or until crispy and golden brown. Set aside to cool slightly and cut into pieces.
Combine the remaining olive oil with the lemon juice and garlic, season to taste.
Heat a non-stick pan and bake the halloumi cheese for 1-2 minutes on each side until slightly charred.
Boil the quinoa following the instructions on the package. Allow to cool and mix with tomatoes, cucumber, green onions, fresh herbs and season with spices to taste. Stir and serve on a plate with halloumi cheese, toasted parlenka, dressing and chopped mint and dill.
