Delicious vegetable soup with beans, mushrooms and orzo pasta. Aromatic and nutritious, rich in useful plant proteins and vitamins and minerals necessary for the proper functioning of the body.

Necessary products:

  • 100 grams of fresh spinach
  • 1/2 teaspoon chopped celery
  • 50 grams of orzo pasta (kritaraki)
  • 100 grams of fresh mushrooms
  • 1 peeled and sliced ​​carrot
  • 100 grams of boiled beans
  • salt and pepper to taste
  • 1-2 liters of water or vegetable broth
  • a few sprigs of fresh parsley
  • 2 stalks of chervil
  • 1 onion
  • 2 teaspoons olive oil

Method of preparation:

Pour water into a saucepan, add salt, pepper and finely chopped onion. Add the chopped spinach, celery and olive oil.

Stir and add the chopped carrots, mushrooms, beans and season with chopped parsley and chervil leaves.

Reduce the heat and cook the soup for 15 minutes, then add the orzo and cook for another 20 minutes or until done. Cool the vegetable soup with beans, mushrooms and orzo, pour into bowls and serve.

Tip : If you do not have orzo pasta, make soup with pasta (pasta, spaghetti or other) or rice. Replace vegetable broth with chicken or another to your liking. Another option is to prepare vegetable soup with chickpeas instead of beans or replace mushrooms with peppers or other vegetables to your liking. Use what you have in the fridge and make the most delicious soup.
