A very tasty recipe for vegetable soup with mushrooms, which you can always prepare at any time, as it is extremely fast, and it is also very tasty.

Necessary products:

  • 50 grams of fresh mushrooms
  • 300 grams of potatoes
  • 300 grams of cabbage
  • 1 bunch parsley (or root)
  • 1 tomato
  • 1 carrot
  • 3 tablespoons olive oil
  • 4 tablespoons tomato paste
  • 1/2 teaspoon black pepper
  • 2 tablespoons flour
  • 1 onion
  • Bay leaf
  • fresh parsley
  • salt to taste

Method of preparation:

Clean the mushrooms, pour them into a colander, pour boiling water, cut into large pieces, boil until semi-finished and remove from the water with a slotted spoon. Chop the cabbage, peel the carrot and parsley root and cut it into pieces, the potatoes into cubes. Add all the vegetables to the broth.

Cut the tomato, mix it with the chopped onion, flour, boiled mushrooms and fry a little. Then add the mixture to the pot with the vegetables, put the bay leaf, tomato paste and simmer on the stove for 25 minutes. Serve the vegetable soup with mushrooms in bowls and serve.

Tip:  If you don't like some of the vegetables we've included in the mushroom soup recipe, feel free to remove or replace them with your other favorites.
