How To Cook Vegetable Soup With Pasta, Beans And Parmesan - Recipe

Required products :

  • 400 grams of canned beans (rinse the beans before use)
  • 400 grams of sliced ​​canned tomatoes (without skins)
  • 180 grams of pasta (farfale, pasta-ribbons)
  • 120 grams of spinach
  • 1/4 teaspoon olive oil
  • 1 head chopped old onion
  • 1 stalk of celery (saturate)
  • 1 chopped carrot
  • 1 bay leaf
  • 5 teaspoons vegetable broth
  • salt, pepper to taste
  • 1/2 cup parmesan (grated)


Method of preparation :

Pour a little olive oil into a deep pan, heat and pour in the onion, celery and carrot. Cook for about 10 minutes, until the vegetables are slightly soft. Then put the bay leaf, tomatoes, pour the broth and let the mixture boil. Reduce heat to low, close the pan with a lid and cook the soup for about a quarter of an hour. Then pour the pasta and beans in it, let it boil again and cook for another 8-10 minutes (until the pasta is ready).

Season to taste, add the spinach and after a few minutes remove the pan from the heat. Remove the bay leaf from the dish, divide into bowls and serve each portion of soup sprinkled with grated Parmesan cheese.
