Required products :

white beans - 2 tea cups

olive oil - 2 tbsp

celery leaves

onion - 1 head

pepper

carrots

garlic - 2 cloves

cumin

flour - 1.5 teaspoons

red pepper - 1 teaspoon

vegetable broth - 2 tea cups

water - 2 tea cups

tomato puree - 1 tbsp

oregano - 1 teaspoon

Bay leaf

salt and pepper to taste

Method of preparation :

Pre-soak the beans for 8 hours in water. Then drain it from it, put it in a saucepan, fill with clean water and cook for 1 hour. Drain the liquid again and leave the beans for a while.

Finely chop the onion, pepper, celery, carrot and simmer in olive oil for about 7 minutes on low heat until the vegetables are soft. When this happens, add the red pepper, cumin, garlic and stew for another 2 minutes. Add the flour, wait a minute, pour the broth, add the tomato puree and season with oregano. Finally add the beans and bay leaf. Let the dish cook for about 20 minutes. If you prefer a thicker soup, let it boil for a longer time, stirring constantly so as not to burn. Towards the end of cooking, season with salt and pepper. Serve hot.
