How To Cook Vegetable Stew With Garlic And Yellow Cheese - Recipe

Required products :

1 tablespoon olive oil

1 tablespoon butter

1 medium onion head

2 small zucchini

1 medium carrot

2 cloves garlic

1 liter of tomato paste

500 grams of tomatoes

1 teaspoon grape juice (from dark grapes)

1/2 teaspoon sugar

1 teaspoon dried basil

1 teaspoon dry oregano

1/2 teaspoon mixture of other dry spices of your choice

salt and pepper to taste

cup of grated cheese

mushrooms at will

Method of preparation :

Peel onions, zucchini, carrots and garlic. Cut onions into cubes, zucchini into semicircles, grate carrots and mash garlic.

Heat the butter and olive oil in a suitable pan over medium heat, add all the vegetables except the garlic and carrots and fry until soft and lightly golden. Then put the garlic and carrot, stew for 1-2 minutes. Pour the tomato puree and diced tomatoes, pour grape juice, add salt, pepper and dry spices. Finally, pour the sugar. Stir, close the pan with a lid, reduce the heat and let the dish simmer for about 35-40 minutes. Then add half of the grated yellow cheese, stir and, if desired, add more spices. Use the rest of the yellow cheese for garnish or for decoration. If you want mushrooms in the ragout, add them to the vegetables at the beginning when you fry them.
