Required products :

500 grams of mushrooms of your choice
2-3 tomatoes
1 large zucchini
4 sweet peppers
1 carrot
2-3 onions
1 teaspoon Provencal spices
salt to taste a
mixture of different types of pepper to taste a
pinch of sugar
oil

Method of preparation :

Clean and wash the mushrooms, boil them in salted water (if you use mushrooms, 3-4 minutes are enough), then cool and cut into pieces or straws.

Wash, dry and chop the peppers, carrots, tomatoes, onions and zucchini (you can also grate the carrots and tomatoes).

Fry onions in hot oil with carrots until soft (about 5-6 minutes on medium heat). Then increase the heat to high, add the peppers and 3-4 minutes later the mushrooms. Then it's time for the zucchini and after another 3-4 minutes - the tomatoes.

Season the dish with Provencal herbs, salt and a mixture of different types of pepper to taste, put a pinch of sugar and let everything simmer under a lid for 12-15 minutes. It is good that the hob is not too strong so that the ragout can simmer and not boil vigorously. Stir several times during this time.

When you turn off the stove, cover the dish with a towel and let it stand for about 10 minutes.

You can now serve the vegetable delicacy.
