Required products :

  • 1 teaspoon peas or chickpeas
  • 2 teaspoons water
  • 50 milliliters of oil
  • 1.5 tablespoons beet juice

Basic spices:

  • 1 teaspoon coriander (ground or grained)
  • a few cloves of garlic
  • 1 teaspoon salt
  • a pinch of nutmeg

Optional:

  • 1/2 teaspoon mustard seeds
  • a pinch of ground red and black pepper

* A tea cup with a capacity of 200 milliliters was used to measure the products.
* When measuring the amount of spices do not overfill the teaspoon.

 

Method of preparation :

Pour water over peas or chickpeas (if you choose chickpeas, they should stay in the liquid for at least 12 hours). Then drain and refill the beans with clean water (2 teaspoons).

Place the pan on the stove, let the liquid boil, then close with a lid and leave on low heat until the peas / chickpeas soften. If necessary, add water during the process.

Once the beans are cooked, pour the decoction, leaving only 50 milliliters of it in the bowl. Pour the oil and cook for another 10-15 minutes.

Prepare the spices.

Fry the mustard seeds under a lid in a small amount of vegetable oil. Once they stop "cracking", immediately remove from the heat and drain the oil.

Mix with salt and garlic and crush in a mortar or grind with a blender.

Puree the peas (without cooling it) together with the liquid and oil, pour the beet juice, add the spices and turn on the blender once more.

Tip: add the spices gradually and taste the mixture.

From the resulting "minced meat" form a thick sausage, wrap it in cling film and tie the ends with thread (resembling candy).

Refrigerate until cool, making it even thicker.

If there was not too much liquid in the mixture, you will even be able to cut the sausage into pieces. Its texture is soft and resembles pate, and the taste is ... salami.
