How To Cook Vegetarian Frittata With Goat Cheese And Tomato Salad - Recipe

Required products :

  • 16 eggs
  • 2 heads of broccoli (about 1 kg in total)
  • 1 teaspoon peas (preferably fresh)
  • 1/4 cup finely chopped onion feathers
  • 300 grams of goat cheese, crushed
  • 2 zucchini, cut into thin strips (best with a peeler)
  • 1/4 teaspoon olive oil
  • 200 grams of cherry tomatoes - different colors
  • 1/4 tea cup fresh dill
  • 1 tablespoon white wine vinegar

Method of preparation :

Preheat oven to 200 degrees.

Beat the eggs with 3/4 tea cup of water.

Add to them the broccoli (cut into roses) - peas, onions and 3/4 of the goat cheese, half of the zucchini and season. Heat 2 tablespoons olive oil in a 24 cm pan (with a fireproof handle). Pour the eggs and cook for 2 minutes on the stove, then transfer to the oven and bake for 30-35 minutes until the frittata acquires a golden crust.

Make a salad of cherry tomatoes, flavored with dill, a little chives, vinegar and olive oil, season with salt.

Serve the frittata, adding the remaining zucchini and cheese.
