This is an interesting and new way to try pumpkin outside the classic sweet version.

Required products :

  • 2 teaspoons pumpkin
  • 1 tablespoon oil
  • salt and pepper
  • 1 puff pastry
  • 1 egg
  • 1/2 cup ricotta tea
  • 1/4 teaspoon olives
  • 1 cup cherry tomatoes
  • 100 grams of feta mermaid
  • 1 tablespoon pine nuts
  • thyme
  • fresh basil

Method of preparation :

Preheat oven to 200 degrees. Cut the pumpkin into small cubes and pour it into a pan, add the fat, salt and pepper and bake for 20 minutes.

While the pumpkin is roasting, prepare the remaining tart products. Cut the tomatoes in halves, the olives into small pieces. Spread the puff pastry in a greased pan. Punch with a fork, and a centimeter from the end of the dough go lightly with a knife to get a board for your tart. Be careful not to cut the dough.

Brush the edges with beaten egg, mix the rest with the ricotta. Pour in the middle of the dough and spread to the board.

Spread the already prepared pumpkin on the egg mixture and sprinkle with a little olive oil. Arrange the tomatoes, crush the feta cheese, pine nuts, olives and thyme (dry or fresh as desired).

Increase the oven to 210 degrees and bake the tart for 25 minutes until the dough is golden and puffy.
Serve the dish warm or chilled, arranged with a few leaves of fresh basil.
