This mini version of the shepherd's pie is very tasty. With a filling of lentils, carrots and corn, the dish is very affordable, but at the same time different and delicious. Attractively served small bowls will definitely not go unnoticed.

Required products :

  • 500 grams of potatoes
  • 1/2 teaspoon whole milk
  • 1 tablespoon butter
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 onion - finely chopped
  • 1/2 teaspoon carrots, cut into small cubes
  • 1 tablespoon water
  • 3/4 tea cup frozen corn
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dry)
  • 3 tablespoons self-swelling flour
  • 1 1/2 teaspoons boiled lentils (or canned)
  • 400 milliliters of vegetable broth

Method of preparation :

Cut the potatoes into 2 x 2 cm cubes and boil them. Once the water boils, reduce the heat to low and cook for 10-15 minutes until soft. Drain the excess water and return to the pan. Pour the milk and butter, add 1/4 teaspoon of salt and a little black pepper. Mash the potatoes until smooth and airy.

Heat olive oil and add onions, carrots and water. Cover with a lid and cook for 3 to 5 minutes. Add the corn, thyme, half a teaspoon of salt and a quarter teaspoon of black pepper. Cook for another 2 minutes, stirring occasionally. Sprinkle with flour and add the broth, bring to a boil, after a minute add the lentils and cook for another 2 minutes, stirring constantly.

Divide the vegetables into several molds, cover with mashed potatoes and bake in a preheated oven at 220 degrees until the potatoes are browned.

If you use ceramic baking trays, grease them with oil and put them in the oven as soon as you turn it on to temper gradually. Otherwise, they may burst from the high temperature.
