Required products :

  • 1 teaspoon salt
  • 2 1/2 teaspoons cornmeal
  • 2 3/4 - 3 1/2 teaspoons water
  • 2 tablespoons melted butter
  • 1/2 teaspoon butter or oil for baking

Method of preparation :

Mix the cornmeal and salt.

Heat the water and pour it over the semolina, stirring constantly with a wooden spoon.

Add the butter and cover the dough with foil. Leave to stand for 15 minutes.

Divide the dough into 12 balls.

If necessary, add a little more water, the dough should not form cracks at the end when working with it.

Place the loaves between two sheets of parchment paper and press to flatten. They should be about 6 inches in diameter and 2.5 inches thick (if you want them to be thinner, make the balls 18 instead of 12). Smooth the edges of the loaves with your fingers so that there are no bumps.

Heat a cast iron skillet and put half a spoonful of fat (butter or oil) in it.

Bake the loaves for 5 minutes on each side, they should brown slightly, but not change much in color. If they burn quickly, reduce the temperature of the hob.

If the loaves are thicker, finish cooking in the oven for 8-10 minutes at 170 degrees (after baking in the pan, transfer to a tray lined with paper and bake until done).

Serve hot.
