How To Cook Venison With Red Cabbage And Blackberries - Recipe

Venison combines perfectly with red cabbage and berries. Serve with mashed potatoes and a glass of red wine for an even more impressive delicious gourmet delicacy. 

Required products :

  • 1 tablespoon melted butter
  • 1 red onion, thinly sliced
  • 1 small red cabbage (about 600 grams), thinly sliced
  • 5 tablespoons balsamic vinegar
  • 3 tablespoons brown sugar
  • 1 teaspoon mixed spices
  • 2 tablespoons raisin jam (or other)
  • 100 milliliters of water
  • 4 venison steaks (about 175 grams each) at room temperature
  • 175 grams of blackberries
  • 2 tablespoons blackcurrant liqueur (blackberry liqueur or other)
  • 1 tablespoon olive oil
  • spices to taste
  • mashed potatoes for serving

Method of preparation :

Fry the red onion in butter over low heat for about 10 minutes or until soft.

Add the red cabbage, balsamic vinegar, brown sugar, spice mix and half of the raisin jam (or other) with 100 milliliters of water. Season to taste and stir. Once it boils, stir, cover and cook for 40 minutes on low heat.

Pour the blackberries and liqueur into the cabbage mixture and continue cooking without a lid for 5-10 minutes until the liquid evaporates and the blackberries soften.

Season the venison steaks with olive oil and spices to taste. Fry in a hot pan for 4-5 minutes on the side (or more depending on the thickness) for the mussel reer (degree of readiness between alangle and medium roast). For the last 1 minute, add the remaining jam to the steaks and cook until it melts. 

Serve the venison steaks and let them rest for 5 minutes. Garnish with cabbage mixture and mashed potatoes.
