Required products :

2 medium beets
2 medium potatoes
400-500 grams assorted frozen vegetables (carrots, peas, corn, green beans)
1 large onion (scald it in advance and chop finely)
2 pickles
1 chili pepper
3-4 tablespoons finely chopped dill or coriander
salt and ground black pepper to taste
1/8 - 1/4 teaspoon olive oil
1 tablespoon Dijon mustard (or 1.5-2 tablespoons of beans)

Method of preparation :

Pour water into a large enough pot, add salt. Put in it a colander in which you put the frozen vegetables. Bring the water to a boil over high heat, then reduce the temperature and let the products boil for 3-5 minutes.


Then remove the colander, drain the liquid and pour the vegetables into a suitable bowl. Let cool.

In the same way, boil the potatoes, pre-peeled and cut into small cubes. When cool, add them to the remaining vegetables.

Bake the beets in the oven (in foil), cut them and mix with the products in the bowl.

 

Add onions, pickles, hot peppers, dill (of course, cut everything in advance). Season the salad with olive oil, mustard, add salt and ground black pepper to taste, stir and leave for a while to absorb the flavors and aromas.
