Required products :
5 eggs
250 grams of sugar
2 tablespoons vanilla sugar
grated lemon peel on the tip of a knife
80 grams of flour
80 grams of ground walnuts
1 teaspoon baking powder
8 grams of gelatin
200 milliliters of liquid cream
500 grams of high-fat cottage cheese
20 milliliters of walnut liqueur
50 milliliters of strong coffee
100 grams of black chocolate
Preparation :
Preheat the oven to 180 degrees.
Separate the yolks from the whites. Beat the yolks until fluffy light mass with 125 grams of sugar, add the vanilla and lemon peel.
Beat the egg whites to a stiff foam and carefully add to the yolks. Then it's time for the pre-sifted flour with baking powder, ground walnuts. Mix everything.
Pour the dough into a greased detachable form, flatten and bake for 35 - 40 minutes.
When the marsh cools, cut it in half horizontally.
Pour gelatin with a little cold water and leave for 10 minutes.
Whip the cream until stiff. Pass the curd through a sieve and add the liqueur and the rest of the sugar.
Drain the water from the gelatin and mix it with the hot coffee, stirring constantly. When the combination cools, add the chilled cottage cheese, cream.
Spread 1/3 of the resulting cream on one loaf, put the second, the remaining cream and put the cake in the refrigerator for at least 4 hours.
Melt the chocolate in a water bath and pour over the cake. Decorate as desired - with pieces of chocolate, walnuts, chocolate shavings ...
