Required products :

250 milliliters of whipping cream

50 grams of walnuts

180 milliliters of fresh milk

140 grams of powdered sugar

2 egg yolks

20 grams of gelatin

 

Method of preparation :

Fill the gelatin with a little water and let it swell. Mix the yolks with the powdered sugar, place the bowl on the stove and gradually pour in the milk, stirring constantly. Heat the mixture to 75 degrees, add gelatin and mix until smooth.

Dry the walnuts in the oven, then crush them.

Whip the cream (it should be cooled) to a thick foam by placing the bowl on ice.

Mix it with the milk-egg combination and gradually add the walnuts.

Distribute the dessert in suitable bowls and refrigerate to cool.
