Required products :

  • 2 medium-sized eggs
  • 125 milliliters of fresh milk
  • 140 grams of pumpkin puree
  • 50 grams of walnuts
  • 55 grams of butter
  • 70 grams of flour, gluten free
  • 20 grams of oats, fine
  • 1 tablespoon honey
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt

Method of preparation :

  • Preheat the oven to 200 degrees / with a fan /.
  • Spread the walnuts on a pan and bake for about 5-7 minutes until golden brown.

 

  • At the same time, put the butter in a small pan and turn on the stove to medium. Once it melts and starts making bubbles, stir constantly until you get a hazelnut color. Remove from the heat.
  • Grind the roasted walnuts in a blender or food processor and mix them with the flour, oatmeal, spices, baking powder and salt.

 

  • In a separate bowl, mix the eggs, honey, 2 tablespoons of toast, pumpkin puree and milk.

 

  • Combine the two mixtures and mix vigorously until a homogeneous mixture is obtained.

 

  • Heat the pan to medium heat and place a lump of butter. Once it melts and begins to "bubble", add a large tablespoon of the dough and spread to form a small pancake.
  • Bake for about 1-2 minutes until golden brown, turn on the other side and wait again for 1-2 minutes.

Serve the pancakes warm, pouring the rest of the baked butter over them. Optionally add honey and walnuts.
