How To Cook Walnut Parfait With Pomegranate Sauce And Chocolate - Recipe

Required products :

1/3 + 1/2 teaspoon sugar
1.5 teaspoon walnuts, crushed into medium pieces
4 egg yolks
3 tablespoons honey
vanilla
1/2 teaspoon fresh milk
1.5 teaspoons high-fat whipping cream


For the sauce:

grains of 4 medium pomegranates
1/3 teaspoon sugar
2 tablespoons lime juice
1/2 teaspoon red wine

 

For decoration:

  • walnuts
  • chocolate
  • mint leaves
  • pomegranate seeds

 

Method of preparation :

Pour 1/3 cup of sugar into a pan and melt the sweet crystals on low heat without stirring.

 

When the sugar acquires a light brown hue, add the walnuts, mix thoroughly and remove the pan from the heat.

 
Spread the combination evenly on oiled parchment. When cool, break into small pieces.

Beat the yolks with the honey and the remaining sugar until creamy. Add the vanilla to the milk and put it on the stove to boil. Once this is done, mix with the yolks, pouring it in a thin stream while hot, without stopping to beat.

 

Let the mixture cook over low heat until it thickens, stirring constantly (do not allow to boil vigorously).

Remove from the heat and beat with a mixer for 15 minutes, then allow to cool.

Beat the cream until you get a stable foam, mix it with the yolks. Add the caramelized walnuts, stir and pour into a suitable container, the bottom of which you have covered with parchment. Store in the refrigerator overnight.

 

Make pomegranate sauce by first squeezing the juice from the red berries, then add the wine, sugar, citrus juice and place on the stove. Let it boil on low heat until the amount is reduced by half. Strain.

When you take the parfait out of the fridge, cut it into pieces with a hot dry knife.

 
Serve with pomegranate sauce, melted chocolate and mint leaves.
