How To Cook Warm Bean And Rice Salad With Goat Cheese - Recipe

Required products :

250 Basmati rice
1 large red onion, cut into semicircles
2 tablespoons oil
600 milliliters chicken broth
1/2 teaspoon ground cinnamon
400 grams canned red beans
1/2 teaspoon cumin seeds

100 grams of soft goat cheese
olive oil and lemon juice to taste
25 grams of pitted raisins
75 grams of watercress salad
fresh parsley


Method of preparation :

Heat olive oil and fry cumin seeds in it for 1-2 minutes. Then add the onion and let it cook until soft, stirring constantly. Then season with cinnamon and stir again.

It's rice's turn. When you add it to the onion, stir and pour the broth. Close the pan with a lid and simmer for about 12-15 minutes until the beans absorb all the liquid and are ready.
Add salt and pepper, pour the beans from the can, from which you have previously drained the liquid. Stir.

Mix watercress and raisins in a salad bowl, sprinkle with chopped fresh parsley and add goat cheese, cut into small pieces. Sprinkle with lemon juice and olive oil, season with pepper, salt and mix thoroughly.

Put in a plate of the bean-rice combination, on it - the fruit-vegetable mixture, mix gently and serve the salad warm.
