Necessary products:

  • eggplants
  • carrots
  • onions
  • tomatoes
  • pepper
  • garlic
  • parsley
  • soy sauce
  • sol

Method of preparation:

Cut the carrots and onions and mash them with oil. Pour the mixture into a bowl and add soy sauce and garlic juice, stir and allow to absorb.

Cut the aubergines into circles, add salt and leave for 5-10 minutes. Then wash, dry and fry on both sides in oil. Put them in a colander to drain off excess fat.

Cut the pepper into not very large squares and fry it in oil. Tomatoes are cut into small cubes, parsley is cut.

Arrange the products in the dish for serving in layers: first layer - eggplant, then mashed mixture (carrots with onions), followed by peppers, tomatoes and parsley. You keep alternating this way.

The warm salad with aubergines is served immediately, but in cold form it is also very tasty.
