How To Cook Warm Potato Salad With Cauliflower, Tomatoes And Olives - Recipe

Required products :

  • 1 kg of potatoes
  • 2 tablespoons lemon juice, olive oil and salt
  • 1 bay leaf
  • 1 clove garlic
  • 2 teaspoons fresh rosemary
  • 2 chili peppers - red and yellow
  • 400 grams of cauliflower
  • 1 tablespoon vinegar
  • 2 tomatoes (canned)
  • 8 black olives

 

Method of preparation:

Turn on the oven to preheat (to 200 degrees).

Wash the potatoes with a brush, cut them into large pieces without peeling them. Boil in a small amount of salted water, in which pour half of the lemon juice and put the bay leaf. Potatoes must retain their shape, do not boil them.

Drain the liquid, remove the bay leaf.

Mash the garlic clove and add to the olive oil. Add rosemary and stir.

Wash the chili peppers, cut in half, remove the seeds and cut into strips 3 cm long, which are also mixed with olive oil.

Pour the aromatic combination over the potatoes, mix them and spread in a pan on a sheet of parchment.

Season with salt, pepper and place in the oven for a quarter of an hour, reducing the temperature to 180. Then remove to a plate.

Wash the cauliflower inflorescences, blanch them for 3 minutes in salt water and as soon as you take it out, rinse them with cold. When drained, add to the potatoes.

Season with vinegar, remaining lemon juice, salt, pepper.

Cut the tomatoes and olives (pitted), add them to the vegetables and serve the salad.
