How To Cook Warm Salad With Lentils, Apple And Sausage - Recipe

Required products :

  • 4 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 3 raw sausages (peeled)
  • 3 cloves garlic, finely chopped
  • 2 teaspoons cooked lentils (or canned)
  • 1 small head of fennel (cut into thin crescents)
  • 1 apple (cut into thin slices)
  • 2 stalks of celery (chopped)
  • 6 cups of arugula or other green leafy vegetables of your choice

Method of preparation :

Prepare the dressing from 3 tablespoons of olive oil mixed with vinegar, mustard and season with salt and pepper.

Heat the remaining 1 tablespoon of olive oil in a pan and fry the sausage, chopping it into small pieces until done. Put the garlic, lentils and leave on the pan for 2 minutes.

Add 5 tablespoons of dressing, fennel, apple and celery. Stir and serve on the arugula.
