How To Cook Warmed By Zucchini With Rice - Recipe

Required products :

  • 1 kg of zucchini
  • 1 onion, finely chopped
  • 2 cloves garlic, pressed
  • 3 tablespoons olive oil
  • 2 1/2 teaspoons zucchini juice + milk
  • 2/3 tea cup grated Parmesan cheese
  • 1/2 cup white rice
  • 2 tablespoons flour
  • 2 teaspoons salt
  • freshly ground black pepper

Method of preparation :

  • Wash the zucchini well and grate them.
  • Sprinkle with 2 teaspoons of salt, stir by hand and transfer to a colander.
  • Place the colander in a bowl and let the zucchini drain for at least 20 minutes.
  • Squeeze them in the palms and add the juice with fresh milk to get a total of 2 1/2 teaspoons of liquid.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat.
  • Stew the garlic and onion for 7-8 minutes until golden.
  • Add the zucchini and cook for about 5 minutes, stirring often.
  • Remove the pan from the heat, add the remaining ingredients and 2 tablespoons of grated Parmesan cheese. Stir.
  • Sprinkle with the remaining Parmesan cheese and 1 tablespoon of olive oil. Cover with aluminum foil.
  • Bake in a preheated 220 degree oven for about 15 minutes.
  • Remove the foil and bake for another 10-15 minutes until golden brown.
  • Allow to cool for 5 minutes before serving.

Note!

If the pan is not suitable for use in the oven, transfer the mixture to a greased pan.
