How To Cook Wheat Salad With Beets And Caramelized Carrots - Recipe

Required products :

150 grams of wheat
5 tablespoons olive oil
700 grams of carrots
250 grams of boiled or foiled beets
70 grams of hard goat cheese
1 clove garlic
1 teaspoon dried oregano
2 tablespoons balsamic vinegar a
handful of basil
salt and ground black pepper to taste


Method of preparation :

Pour cold water over the wheat for 24 hours. Then drain it, pour clean and boil the beans until done. If necessary, add water, let them be covered at all times. The wheat should be soft on the outside and dense on the inside. Then drain the liquid, add 1 tablespoon of olive oil, salt to taste and leave to cool.

Peel the carrots and cut them into oblong pieces about 1 cm thick. Drizzle them with 2 tablespoons of olive oil, add vinegar, season with salt and ground black pepper. Pour them into a pan (in a row), the bottom of which you have covered with parchment, and bake in a preheated oven at 190 degrees for about 30 minutes. Carrots should turn red and become slightly crispy.

 

Cut the beets into 1 cm thick pieces, which you add to the carrots when you take them out of the oven while they are still warm. Also add basil and a mixture of 1 tablespoon of olive oil, oregano and garlic clove. Finally, pour the wheat into the bowl and salad and ready.

Sprinkle with the remaining olive oil and serve with shredded goat cheese.
