Method of preparation :
Boil the water and wheat, reduce the temperature of the stove and let the beans simmer under a closed lid until soft (about 20-25 minutes). Drain and rinse under running cold water.
Combine onion with lemon juice, vinegar and salt and set aside for 5 minutes. Add the diced persimmon (mango or apples), dried cranberries, olive oil and wheat and stir. Before serving, add the baby arugula and garnish with black pepper.
