How To Cook Wheat Salad With Cranberries And Persimmon - Recipe

Required products :

  • 4 glasses of water
  • 2 cups wheat
  • 1/2 head red onion, cut into thin strips
  • 1/4 cup lime juice
  • 2 tablespoons sherry vinegar
  • 3/4 teaspoon salt
  • 450 grams of paradise apples (hard ripe mango or diced apples)
  • 1/2 cup dried cranberries
  • 1/4 cup extra virgin olive oil
  • 4 cups baby arugula
  • ground black pepper to taste

* A tea cup is used to measure the quantities.

Method of preparation :

Boil the water and wheat, reduce the temperature of the stove and let the beans simmer under a closed lid until soft (about 20-25 minutes). Drain and rinse under running cold water.

Combine onion with lemon juice, vinegar and salt and set aside for 5 minutes. Add the diced persimmon (mango or apples), dried cranberries, olive oil and wheat and stir. Before serving, add the baby arugula and garnish with black pepper.
