How To Cook White Bean Hummus With Garlic, Lemon And Rosemary - Recipe

Real hummus is made from chickpeas, of course, and the next option with boiled white beans is a delicious improvisation with which you can diversify the traditional recipe.

Required products :

  • 1-1.5 teaspoons white beans (you can use canned)
  • 2-3 garlic cloves
  • 0.5 teaspoon dried rosemary
  • 1-3 tablespoons fresh lemon juice
  • 2-3 tablespoons tahini paste
  • 0.5 teaspoon sugar if desired
  • salt to taste
  • pinch of paprika (sweet)
  • 2 tablespoons olive oil
  • onion head optional

 

Method of preparation :

Rinse the beans, pour cold water over them and leave for 2-3 hours (maybe overnight if you have that much time). Then drain the water, pour a new one and place the dish on the stove. Boil the beans until cooked (over medium heat for about an hour), drain the liquid and cool the beans.

 

Peel the garlic and saturate.

 

Mix in a blender beans, garlic and beat until smooth.

 

Pour a tablespoon of olive oil, season.

 

Stir thoroughly and the hummus is ready.

 

If you decide to use an onion, peel it, cut into cubes.

 

Fry until golden (stirring) in the remaining fat (1 tbsp).

 

Once cool, add to the bean paste and you can serve the hummus as a side dish to meat, fish or just fresh bread or lavash.
