How To Cook White Bean Pate With Dried Tomatoes And Garlic - Recipe

Required products :

500 grams of boiled or canned white beans

1 medium onion head

2 cloves garlic

8 dried tomatoes (in oil)

2 tablespoons marinated capers

juice of 1/2 lemon

1/2 teaspoon sweet red pepper

60 milliliters of olive oil

1 bunch parsley

salt and pepper to taste

 

Method of preparation :

Finely chop the onion and fry in 1 tablespoon of olive oil. Peel the garlic cloves, mash with a knife and add to the onion. Fry until golden.

Drain the liquid from the beans and rinse the beans if using a can. An option is to boil the required amount. Grind the prepared beans in a blender, pour olive oil, lemon juice, add garlic and onion.

Beat everything until smooth.

Grind the dried tomatoes and capers, chop the parsley and mix with the bean puree. Season with paprika, salt and pepper to taste.

Stir thoroughly and you can serve on a slice of bread.
