Required products :

  • 1 red pepper, cut into cubes
  • 1 yellow pepper, cut into cubes
  • 1 small red onion, chopped in bulk
  • 3 cloves garlic, chopped in bulk
  • 2 tablespoons olive oil
  • 430 grams of white canned beans, rinsed and drained
  • 3 tablespoons red wine vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • salt and freshly ground black pepper
  • fresh parsley, finely chopped
Method of preparation :
  • Preheat oven to 200 degrees.
  • Mix the peppers, onions and garlic in a small pan.
  • Sprinkle with 1 tablespoon of olive oil, season with salt and pepper to taste. Stir.
  • Bake for about 25 minutes, until soft and caramelized, stirring occasionally.
  • Pour the beans into a large bowl and add the roasted vegetables while still warm.
  • Season the salad with the remaining olive oil, vinegar, lemon juice, salt and pepper to taste.
  • Leave it to stand for about 1 hour at room temperature to allow the aromas to mix. Stir periodically.
  • Remove the garlic cloves, sprinkle with fresh parsley and serve.
